昨天在家吃韩国式烧烤, 做KIMCHEE是来不及了, 不过腌个萝卜丝一天半天的也够了. 菜谱出处已不可考, 不记得是从哪个网站搜出来的, 被我改动过. 这个小菜非常好做, 而且爽口.
白萝卜半根, 削皮切丝, 切粗条也可以. 放盐腌二十分钟左右, 当中翻动几次, 目的是让萝卜出水. 用手挤干水分, 放到有盖的容器里(容量最好跟萝卜丝的量差不多, 能把萝卜压紧), 加两三片姜.
小锅加水, 糖, 白醋, 比例大约在1:3:2左右, 小火煮至糖熔化, 趁热倒入容器中(据说这是使萝卜保持爽脆的秘诀), 没过萝卜丝, 晾凉后盖上盖, 在室温下或冰箱里放大半天就成.
一次不要做太多, 在冰箱里放久了萝卜味会比较冲. 同样的做法也适用于其他蔬菜, 比如莴笋, 黄瓜, 白菜花, 卷心菜等等, 味道都不错.
