十五分钟美味: 三文鱼沙拉

周六的中午, 买菜归来, 懒得做饭, 来一个三文鱼沙拉, 快速, 美味又营养.

主料:
带皮三文鱼, 一磅左右
6 cups mesclun (3 oz) (young tender green salad mix, 买不到可以用好的spring mix代替)
1 cup cherry tomatoes, halved
1/2 cup Calamata olives, pitted and chopped (optional)
2 tablespoons chopped chives (optional)
2 tablespoons chopped basil
Kosher salt (粗盐)

沙拉调料:
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 1/2 teaspoons Dijon mustard (第戎芥末酱)
1 garlic clove, minced
Salt and freshly ground pepper

做法:
1. 烤箱预热至400F.
2. 小号烤盘铺上铝箔纸, 洒一层粗盐(约1/4英寸厚), 将三文鱼(带皮那面朝下)放在盐内.
3. 烤15分钟左右至熟透, 将三文鱼取出, 弃皮(皮极咸)分成小块.
4. 取大碗, 倒入橄榄油, 醋, 芥末酱和蒜末, 用打蛋器搅匀, 加盐和胡椒末调味.
5. 将蔬菜, 小西红柿, 橄榄末, chive末和九层塔末放入拌匀.
6. 加入三文鱼拌匀上桌.
